I like Steak Tar Tar but that Ribeye is a bit to rare for me. That said I prefer it a bit to rare than over cooked.

How much did the 24 oz cost you?

I'm a solid medium person myself. I almost prefer the taste of the marinade to the steak itself so how cooked it is does not matter as much as how long it was in the marinade. This is why I normally get medium priced ribeye and new york ($4-$5 a lb). No point in buying expensive cuts when I'm going to soak it in a homemade marinade overnight :)

Medium Well for me, I can't stand it with any red in the center. I do tend to marinade the steaks though before cooking them. If not then lots of Worcestershire sauce.

Dunno, my stepfather bought me 3 ribeyes for shits n giggles. Prepped 2 last week for a date. They were something like $9 /lb at Costco

I had filet mignon last night for dinner. Medium rare with a little blue cheese butter over it, it was fantastic. Didn't take any pics though.

this alton brown method... does it produce an amount of smoke that could set off a fire alarm?

I need me some steak. But living in an apartment-dorm, with no access to a grill... I'm at the mercy of whatever the school can provide at the various campus food places when it comes to anything other than lunch meat.

Interested in picking up some cast iron and cooking a steak like this... and well, actually cooking it... if it's possible to do without issues.
Possible to get a good medium-rare or medium, out of that method?

Dry rubs complement a steak using this method?

Basically, can I still get a good juicy medium steak? Without heavy smoke?
