I prefer medium rare. That sir, is what they refer to as "blue". I find that with some steaks, they actually get a little more tender as they firm if they are cooked a little more. When they are that raw they are a little on the rubbery side. Not like the shoe leather chewy that well done steak turns into...but it's not a texture I really like.
