I know a bit of people around here with Macs and I was just never impressed, they just seem like overpriced computers that people get cause they wanna be different. People are always like "Apples rule at video editing" and I say BS, I have seen what they can do and our machines at work smoke anything that have seen done by an apple and our machines cost less (I do video editing all the time at my job).
I will say that the MAC OS is better than anything before XP, sure smoked the crap out of 98 and ME. However, after using XP I gotta say that it is fairly rock solid.
The only thing I will give credit to on the new mini is the fact that it is at a decent price for anybody who for some reason wants to go the route of macintosh. But dosen't companies like Dell offer more powerful machines for less money with the monitor included (even though much less stylish)?
In the end I kind of compare a macintosh to my old Mazda RX-7, sure I loved the (in fact best car I ever had) car but it was impractical cause of the rotary engine and there was not nearly as much support for the car as for say a Toyota Supra. So would I go with the Mazda RX-7 or RX-8? Probably not cause it would cost too much money to fix the cars.

They're not overpriced for what you get with them.
Not sure what you claim to be using that 'smokes' a mac, because it seems you're using XP which is a 32 bit OS whereas MacOS is 64, running on 64bit G5 processors = huge amount more memory addresses = huge amount more available memory. Plus of course MacOS and the video editing software that runs on it (premiere, etc) has full dual processor functionality built in so it can make use of the dual CPUs much more effectivly. If your hardware was so sweet, I wonder why Viginia tech didn't use it to make the world's third most powerful supercomputer:

Trying to claim that XP is ok because it is 'fairly rock solid' is like trying to claim your car is ok because it doesn't randomly explode. An operating system should ALWAYS be solid. It is not a selling point, it is a basic requirement. The fact is we're so used to windows being shoddy that we're actually impressed when it reaches the minimum standard.
MacOS X isn't amazing because it doesn't crash often, it's a huge list of features that makes it superior to any other OS out there.
The mini is fantastic. Sure you could pick up a dell, but you'd no doubt be running windows which is a poor operating system (see above).
As for support, well, what do you mean by support? Less hardware available? Macs come with USB2, 802.11G, 1394, DV out, a 56k and have audio built in, so you won't need to buy any of that hardware. What else are you thinking? Graphics cards? You can get pretty much all of the latest GPU's in Mac format no problem (They're AGP inside there). HD's? They support regular ATA or SATA drives. TV cards? they're available, no problem. Basically hardware support is not an issue.
Or are you talking about company support? Well you won't get a virus and much less likely to get any kind of system error with a mac. They defrag on the fly and maintain themselves in the background silently. Chances are you won't need support; I've never needed it. The support is amazing, however, even if you do get a problem (some hardware fails, it's unavoidable).
Overall you pay a little more initially, but you do save in the long run. They are top-notch machines and the only downfall is gaming, which is improving rapidly.
