When I had an 8800 GTS 320mb and I enabled Anti-aliasing in Dirt 1 at 1920x1080 2xAA, the game was a slideshow. I am talking 2-3 fps. Disabling AA with everything else intact resulted in 20-25 fps or so iirc. I then realized I have a VRAM limitation and upgraded to the 4890 1GB. If a serious VRAM limitation actually exists, then the game is unplayable and/or the performance hit is very large. Those benchmarks do not indicate anything of the sort for the GTX570.
A VRAM limitation would cut the performance by 2-3x (8800 GTS 320 vs. 640mb):

OR make the game completely unplayable (i.e., slideshow), as I experienced in Dirt 1 with 8800 GTS 320.
Shogun 2 exhibits this situation: http://www.computerbase.de/artikel/grafikkarten/2011/test-19-grafikkarten/24/#abschnitt_shogun_2
Perhaps the game engine dynamically pre-loads higher quality textures on a 2GB VRAM card. But I am not a programmer so I can't comment on the technical details of this. If the game actually required more than 1GB of VRAM, I would expect at least a very large performance hit in FPS.
Having said that, since this is still a BETA and we might get higher quality settings/textures under Ultra in the final release, perhaps the 1GB VRAM limitation will become real.
