Trying to use up some of that double smoked ham that I made on Sunday. Decided to keep it simple and just make some ham and cheese sandwiches.


Open faced broiled for few minutes with some fresh jalapenos from the garden, some pepper jack cheese, and some fresh bread.

Close faced under the broiler for a few minutes to give the bread that crispy texture and crunch when you bite into it.

Cut open for all to see. Just a simple sandwich tonight for dinner but it tastes really good and uses up some leftovers.

bonus points if you make the quasi industrial centrifuge in the upcoming video.
 
A lot of homemade bread. I'm still learning what I can and can't eat, though surprisingly Taco Bell never makes me sick. Just can't have anything warmer than about 90F/32C, which is hard.
 
I just finished making a pork cottage roll dinner in my instant pot.

Pork cottage roll is a sweet pickled boneless pork shoulder (mine was 3 1/2 pounds). I also cooked some baby Yukon gold potatoes, onions and rutabaga in the liquid I cooked the cottage roll in.

This is insanely delicious.
 
Have been practicing my vegan/vegetarian cooking due to a few house guests and managed to work out a good vegan "beef" pie! Has jackfruit and lentils in and was very popular even with the meat eaters!
Found a nice veg restaurant that makes delicious sandwiches. To make up for the low protein content, they add cheese. Pretty great.
 
I made a bean with ham type soup using leftover cottage roll and Great Northern beans and carrots and celery. And fresh herbs for seasoning.

Turned out great and hearty.
 
I have secured all of my ingredients to make beef stew tomorrow. I am so looking forward to some comfort food now that real autumn weather is finally here.

I will see about some crusty bread as well.
 
My beef stew turned out amazing. I did need to add a bit more salt but this is such a thick delicious stew.

I had 3 bowls and I am stuffed.
 
putting Costo rotisserie chicken on plate count as cooking right? I did have to toss the salad and slice the bread.
 
Ghetto gourmet tonight. FieldRoast veggie burgers fried up, and put on a plate with a can of sliced carrots. Rosemary finishing salt went on the carrots, and Vietnamese smoked black pepper went on everything. The burgers also got habanero sauce poured liberally over them. Super simple, super good.

GroceryOutlet gets the burgers sometimes, but they're refrigerated. I'll get a couple packs at the full price of $3(still cheaper than normal retail), but when they don't sell, the expiry approaches, and they sell for a $1 for a pack of two burgers. I buy a bunch then, and freeze them. I like them better just sitting on a plate, than on bread with the usual burger stuff.
 
Chicken Paprikash is dinner for tonight. This is an Eastern European recipe from 1892 which loosely follows the travels of Jonathan Harker from Bram Stokers Dracula as the character travels from England to Transylvania.

Chicken is simmering in the pot as I add a little of the stock to some sour cream. The house smells SO good right now. I can't wait to see how this recipe turns out.

It turned out amazing. Creamy, hearty, and so tasty.

I made my cabbage roll casserole today!

The meat filling:

2 pounds of ground pork
1 medium onion chopped
3 cloves of garlic minced
1 large red pepper sliced
1 cup of rice
fresh dill
salt, pepper and Italian seasoning
tomato sauce

cooked in my large pan and smelled amazing.

I then cut up a average sized cabbage and the layered everything in my 6 quart Corning Ware dish. I poured in some more tomato sauce and baked it at 350F for 1 hour and 20 minutes.

Served it up with some dollops of sour cream. Absolutely delicious.
