Trying to use up some of that double smoked ham that I made on Sunday. Decided to keep it simple and just make some ham and cheese sandwiches.


Open faced broiled for few minutes with some fresh jalapenos from the garden, some pepper jack cheese, and some fresh bread.

Close faced under the broiler for a few minutes to give the bread that crispy texture and crunch when you bite into it.

Cut open for all to see. Just a simple sandwich tonight for dinner but it tastes really good and uses up some leftovers.

A lot of homemade bread. I'm still learning what I can and can't eat, though surprisingly Taco Bell never makes me sick. Just can't have anything warmer than about 90F/32C, which is hard.

I just finished making a pork cottage roll dinner in my instant pot.

Pork cottage roll is a sweet pickled boneless pork shoulder (mine was 3 1/2 pounds). I also cooked some baby Yukon gold potatoes, onions and rutabaga in the liquid I cooked the cottage roll in.

This is insanely delicious.

Have been practicing my vegan/vegetarian cooking due to a few house guests and managed to work out a good vegan "beef" pie! Has jackfruit and lentils in and was very popular even with the meat eaters!
Found a nice veg restaurant that makes delicious sandwiches. To make up for the low protein content, they add cheese. Pretty great.

I made a bean with ham type soup using leftover cottage roll and Great Northern beans and carrots and celery. And fresh herbs for seasoning.

Turned out great and hearty.
