Sunday I will try making homemade granola bars.

These are great:


You basically just mix the goop together then bake it for a few minutes. Some ideas:

1. Classic granola bars
2. Peanut butter granola bars
3. Chocolate-dipped (Kudo's-style)
4. Yogurt-dipped with dried fruit (ex. dried blueberries in the bar or strawberry granola bars)

Energy Bites are also really good: (no-bake fresh cookie dough ball-style granola bar bites)


Zillions of flavors available: (mint chocolate, lemon, protein powder-packed, etc.)


I make these in batches then freeze them. Then I can just grab a couple the night before to thaw for my lunchbox!

Yesterday I made a pork loin roast with potatoes, carrots and onions. It was great.

for dessert I made brownies. 😀
 
Made chicken wings in the air fryer on Saturday. Frank's hot sauce with butter in it.

Now I'm debating putting the air fryer back in the cabinet or keeping it out on the counter to remind myself to use it more.

Any great air fryer dishes to make?
 
What's the recipe for the potato component?
Thinly slice potatoes. Heat some cream, a bit of milk and some garlic. Add potatoes to cream just to start them off. Stick potatoes and cream in a buttered oven dish. Bake on a lowish heat covered with foil for a couple of hours, and sort of gently squish the potatoes down now and again. It to mash them but just to get any air bubbles out. When the potatoes are cooked remove foil and add a little gruyère, pop back into the oven until browned.
I'll pull up a proper recipe with measurements when I get home but I usually make it up as I go!
