Went camping last weekend. First night were marinated boneless chicken thighs and asparagus. Second night were two rib-eyes of which one was mostly end cap, with simply Montreal Steak seasonsing -grilled over the fire on my titan stake grill. Came out amazingly cooked, mine melted in my mouth like butter. Also grilled fresh Jersey corn. My friend she sauteed up garlic, shallots, zucchini and fresh thyme in olive oil on my 15 year old coleman stove, those things were made well back then. I threw in some gold potatoes in foil around the fire and we had those too. Forgot to take a plated picture. My friend Amy said it was probably the tastiest meal she's had in two months it all came out so good. Camping labor day weekend should be another couple smashing meals.

What's up with the way the bread is cut in small slices ... is it intended to eaten with utensils?

EDIT: Ahh IC .... only LOOKS like bread and is actually breaded "pork-belly" .... so even YUMMIER!

Camping this weekend. Rained out the third night but night one was marinated pork tenderloin grilled over the fire, grilled corn, a packaged spanish rice, and a sauteed squash. The headlamp blue light fucks with the colors a bit, but the pork was just a tad bit overdone but still tender. Night two was grilled marinated flank steak cooked perfectly, asparagus roasted in foil then finished on the fire, baked taters, and a mushroom medley with garlic, white wine and sage (lots of shitakes, buttons, baby bellas and criminis) - We were happy campers. The mushrooms were just insanely good. Star of the weekend followed by the flank.

It's a crime for you to eat better at campsite than other folks at home :colbert:
We have burgers, cold cut sandwiches, oatmeal and eggs, fruit and power bars. But for dinner we go all out.

Though night three we got rained out but we were supposed to make pepperoni pizza mountain pies. I only learned about those this year and my friend Amy brought one of the mountain pie cast iron things for us to use.

Those were pretty simple. Butter bread, a nice pizza sauce, shredded mozzarella, and uncured pepperoni. Then stick it in the fire

Sizzling Pork Sisig (head meat and liver with onions, hot peppers and egg) , goes amazingly well with a nice cold San Miguel

No pics sadly but I made corned-beef hash from scratch using a 2.5lb "point-cut" of beef with red onions, yellow sweet peppers and red potatoes.

Came out amazing .... had it for dinner last night and for breakfast today too and am freezing the rest before I polish off another 1/2 lb for lunch!


I swear I could actually FEEL my cholesterol rising with every bite! 😀
 
No pics sadly but I made corned-beef hash from scratch using a 2.5lb "point-cut" of beef with red onions, yellow sweet peppers and red potatoes.

Came out amazing .... had it for dinner last night and for breakfast today too and am freezing the rest before I polish off another 1/2 lb for lunch!


I swear I could actually FEEL my cholesterol rising with every bite! 😀
I love a good corned-beef hash. I usually use potatoes, onions and green pepper along with some dried Thai chilies mixed in for spice.

Been making donuts at home lately. Found a good recipe for yeast raised donuts.

They fry up super light, fluffy and crisp on the outside.

Only issue was I let them over proof just a little while the oil was heating so I got a couple of large air bubbles that ended up deforming a ring or two.

Please share recipe, when COVID hit, the ONLY donut shop relatively close closed its second store which was a half hour from where I live. The main store is 1.5 hours away.
Have you done cinnamon rolls? I would love to get those again, and not the stuff in a tube you crack open. Some places call them coffee rolls.
 
I am just finishing making a big pot of pork stew. The recipe called for parsnips (yuck) so I substituted rutabaga.

Smells amazing in here. I can hardly wait to try it.

This one was special because it was our first attempt at making our own curry from scratch. No canned curry here.
