I bought a wok and have been learning to make simple meals.

Today I decided to try something more ambitious - Curry chicken noodle lo mein

View attachment 63871

It tastes like heaven and is better than any takeout I have had.
That looks delicious.

I got a wok earlier this year and a couple cookbooks but then, if you never heard of them, J Kenji Lopez-Alt, he wrote a pretty important book years back called The food lab. And then he's been a big part of the serious eats crew, he has an amazing YouTube channel where he shoots recipes of all kinds from super simple tuna salad to more complex items, mostly from his GoPro.

But he also does a lot of Asian dishes in a wok. His second cookbook just came out a few months ago and it's just called The wok. It's pretty amazing, teaches you techniques along with recipes, and is quite the tome.

I've made a couple dishes and they've come out ridiculously good. Check it out I think you'd like it

Thems good eats! Question, do you feel you need to do something to cut the anise down from five spice? I like it but I feel like anything I put it in tastes like licorice.

I am used to five spice so nope. I buy 400g of it each time.

But then I mix licorice powder, salt and sugar (3:1:1) and season watermelon with it xd.

Chicken liver sautee over rice cooked in chicken broth. This time I cook the onions slowly, and cut the mushrooms into bigger chunks so they could retain more shape and tooth, plus soaked the livers in milk overnight.

Lots of garlic just until it was fragrant right before putting the livers in. Deglazed with some Pinot grigio and a touch more of that chicken broth. Absolutely best version I've made yet.

Also a wok spatula is absolutely fantastic for scraping a pan while deglazing.

Made my first bolognese. The usual mirepoix, garlic, pancetta, veal pork and beef, Pinot grigio, tomato paste, milk, fresh thyme, and finished with a little bit of heavy cream and butter, top with a bit of freshly grated cheese. I did not realize Bolognese did not have any tomato sauce in it per se just tomato paste.

Absolutely divine.

Deconstructed spring roll bowl. Cabbage, carrot, cucumber, thai basil, green onion, sesame seeds, rotisserie chicken, vermicelli noodles, and a killer peanut sauce.
