The EU isn't a military force, NATO is and Ukraine isn't part of NATO. EU is sending a lot of military equipment to Ukraine. NATO has been historically lead by the US. The US walking away from this leadership role has created a huge gap that is not filled overnight. So what exactly are you wanting the EU/NATO to do about the war in Ukraine that they are not doing right now?
The issue of NATO (Europe) is that all those armies are not together. Even worse, if Hungary and Slovakia betrays the NATO, is likely to lose some more people and if West Germany and South Italy decides to step back / support Russia, NATO would lose a pretty noticeable ammount of troops on there.If Russia were to gobble up Ukraine

The Germans, who are really the most important player here, are making massive investments in arms production. The benefits of this won't be realized until 2026 and 2027 when their new plants start actual production but it's coming. MBDA is gonna be making PAC-2 missiles and Rheinmetall is essentiality buying the ATACMS production line (among other products) from LM and will move it to Germany.

NATO isn't going to war against Russia unless the US agrees and neither Biden and Trump ever agreed that to that.
The problem is nuclear powers are very circumspect about engaging in direct conventional war against one another. Because of this, there is somewhat of a strategic paralysis for Europe and Russia over Ukraine.
