The body uses water, no matter what one can magically do. But if you have some extreme buddhist, or general mental state of zen self-discipline, you could control your body's perspiration... to a degree.

There's fraud somewhere in this picture, could be the medical team even.
 
For one thing tho, he's probably not moving much. When he's not asleep he's meditating or in a state of some zen. He probably isn't even using his brain much everyday at all, thus I could see that as lowering his need for daily calories.

Even so, THAT alone wouldn't have allowed him to survive with comprehensively A-1 physiological results over a full two weeks of ZERO food or water!
