AS/AP uses basically every ability he has, which does work since he's got quite a few spells at his disposal.
The main reason why Kog is strong as an AD is his W, it gives him the longest auto attack range in the game when it's maxed and adds on a % of their max hp as magic damage, combined with a PD and an IE you'll basically rip through most opponents before they can even reach you.
The build you posted isn't even an AS/AP build, it's just a high auto attack speed + on hit effect build, which is one way of building him. However if you lost a little bit of attack speed and in turn traded it for the AD items that carries typically build (Bloodthirster, IE, etc.) you'd do an immense amount of physical damage from a good range away as well as magic.
Nothing wrong with your build as it's the more or less standard auto attack build (Teemo does it better for the most part) but if you really never died after switching builds it's not the items it's you. None of those items give you any really high amount of defensive stats (a bit of a boost to your armor/MR but that shouldn't change most of your fights) so it sounds like you were getting caught out of position a lot and blaming it on the items when in reality its just you being in the wrong spot at the wrong time.
Also I'd like to add to anyone that participates in the PBE that Varus is in the client now and he's actually quite fun. Having some weird issues where his Q seems to disappear though.
