I hate when places bring my steak sizzling on the plate. That means they just took it off the grill and I have to sit there and wait while it rests. :roll:

A guy I used to work with always told the waiter he wanted his steak so only a good veterinarian could tell it was dead. Of course he had a coronary and died a couple of years after I left that company.

medium rare FTW.

i used to work at a nice seafood joint in SOHO and when somebody would order a tuna steak well done the check would ask if they wanted varnish on it :D

I don't know how the level of cooking makes it any more heart-wise healthy. I was under the impression the longer you cooked meat on a grill the more carcinogens built up on the meat.

It is true. It's a basic thing when cooking. Consider scrambled eggs: However you like them cooked, it's best to slightly undercook them, as they will continue to cook themselves when you dish them onto a plate.

I had a rare+ sirloin steak last night... the bloodier it is, the better!

I like mine cooked "Pittsburgh" style, nicely seared on one side flipped for maybe 90 sec.
on the other. To the vegans I remind them there is room for all god's creatures, right next
to the mashed potatoes...

yes, medium well is a choice, but even medium is cooked pretty through and through.. you could make the switch pretty easily without being grossed out by blood spilling all over your plate when you cut into it.

Then once you realize that it tastes so good, you will drop to medium-rare ;)

Rare or medium rare depending on the cut.

You only need steak sauce if you can't cook a steak.

You don't like steak, you like A1. A1 is ONLY for bad (and well done) steaks. A1 has such a potent flavour, you can't really taste anything it is used on.


OP:
Try going further, the steak only gets better. You'll be chewing and sucking the juices out of a rare steak in no time. Just find a good restaurant where they keep the lights low enough that you can't tell how red it is.

I used to order well done like all the other unwashed masses, then I moved down to medium and saw that it was good. These days it's usually medium rare or medium. Medium rare at a good restaurant is great. I know people who prefer their steak not just well done, but burnt, it boggles my mind.
