Go to a good steak place, order a good steak.

Go to a good seafood place, order some good seafood.

Go to a good "other food" place, order some good "other food".

Follow these simple rules and you will have minimal problems like this in the future.

Seeing as this is a signature restaurant by probably one of the most famous chef's in the world, i would have thought whatever you ordered would have been fantastic.

Medium-Rare Wagyu Filet Mignon FTW. (Kobe is better, but too pricey for not enough difference.)

...except there isn't really. The nicest cuts of meat are the least flavoured. Lamb, moose, elk etc have flavour. A tenderloin steak is pretty lacking in flavour by comparison.

Don't get me wrong, I love a good prime rib/ribeye steak myself.

Ribeye = flavor (mmm.... melted fatty goodness).

Filet/tenderloin = extremely tender but little flavor.

This is why I look down my nose at filet snobs. Filet is for people who want to look like they love steak. Ribeye and Strip are for people who really do love steak (Porterhouse/T-Bone is okay because you get both the Strip and the filet).

ribeye is my favorite cut of meat when i just want steak flavor. just salt & pepper and it is full of flavor.

tenderloin is great when it is flavored more.

i also like ribeye with a slightly spicy rub too.

skirt & flank steak done right is intensely flavored as well.

Fantastic compared to what?

Chilis / TGIF / Applebees? yep.
A gourmet specialty restaurant? nope.

Anything over medium-rare is over-done for me.

Hamburgers => Medium-rare
Steaks => Rare

I always order mine medium-well. Anything less and it seems too underdone. Pink is ok, having it still pulse while I'm cutting it isn't.

And thats why your not a big fan.

Thats like me saying, "Not a big fan of sushi but when i used to eat it I ate well done." Its no longer a steak if you cook it until its well done. It becomes a slab of crap.

A 'gourmet specialty restaurant'? Oook. You've obviously don't know what you're talking about either.

I thought Mario was actually supposed to be a good chef? Istr some chef here in Austin talking about what a phony Flay was, but he seemed to respect Mario. Maybe I'm remembering wrong.

I really hate Flay in any case. :p

As someone said here, "Pink but not bloody". At least, not too bloody, although Sirloin is a somewhat dry meat and as such should be cooked a little less than the norm.

I just had yesterday a 50oz or so Porterhouse and LOTS of good alcohol, all in the best (IMHO) restaurant I know. Specializes in meat. 120$ was the damage, where you could get a perfectly good meal for 20-30$. But hey, that was worth it...

Then I caught a ride with a friend in his Honda S2000 (2.0, not the US 2.2), top down - That glorious engine note only gets better when you're well drunk and fed. FTW. That's an evening I won't be forgetting for a while...

El Gaucho?
I have fond memories of good times in the Ramat Gan location.

Oh noes ;) El Gaucho is considered to be mediocre at best, quality wise. It's another place called NG. Drop me a line when you visit, eh, it's not Kosher however ;)

AMDZen,

The first year of the S2000 was a 2.0 liter engine, whether it was a US car or not. When they switched to the 2.2, it was a change made in the US and abroad.

My friends car is a 2006, Euro-spec and its definitely a 2.0 with the 9000RPM redline (not the 8400RPM or whatever is there on the 2.2). It's intoxicating. I'm outside the US...

I always order medium. When I cook at home though, it usually ends up closer to well. I can never time it right to get it medium when I cook it myself.
