Because the game's hunting element and immersion makes the game worth the money on it's own. I can easily spend an entire night hunting game. Each animal has it's quirks.
Deer come in packs usually and they aren't aggressive, but they will scare easily and they are hard to chase down. So you usually get one shot or else they scatter and disappear.
Where as a bear is aggressive and will get pissed and confront you if you shoot it.
Alligators are hard to find and usually find you.
Tigers can be aggressive AND quiet. They'll stalk you until you sit still for a few minutes and crawl up on you.
The birds (cassowarys?) also come in packs like deer, but they will gang up and maul you in a pack, (where as the deer scatter)..
