I'm pretty sure that you already know this Zeze but for the rest of the amateur hour that I've seen in this thread (I want my steak without any pink *shudder*) that actually wants to try a decent steak medium or preferably medium rare, don't forget to let the steak rest for at least 30 minutes after cooking it. I typically do this by putting it on a plate and tenting it with foil.

You rest a roast, not a steak. The point of resting is because the meat continues to hold on to the heat and continues to cook beyond when you pull it out of the oven/off the grill. So you pull it out early and let the inside finish cooking with the heat of the outside...this helps the roast heat evenly and avoids having a bloody center and a charred outside.

A steak is far too small (well, maybe a porterhouse or something could get some help from it) for any affect of "resting" after cooking.

agreed. that is how a steak should be! though that depends on the steak. i had one rare that was flat out amazing. a buddy of mine's dad got them and made them up (he wouldn't buy cheap stuff. also has a few million in the bank). the steak was amazing.

My family being British, they cook the shit out of everything. "If it's not black, it's not done." Ate more than my share of well done steaks and shoe leather pork chops growing up. It's hard convincing them not to overcook things.

It's one of those things you have to do when you have shit ingredients, but once you have some decent food to start with cooking the hell out of it makes no sense.
