We invited my fiance's close friend for her belated birthday dinner.

ANOTHER 5-10 per side? That'll come out as a beef jerky hockey puck, no exaggeration.

What you see is 2 mins each. Well-done would be 10 minutes total.

No, the definition of Medium Well IS slight pink in the middle. If you cook them for 5-10 minutes PER SIDE you're going to be shingling your roof with it.
If this is the new definition of medium well than I guess I'll be ordering steaks well done from here on out. I don't like raw meat.

Just because there is pink in the middle does not mean the meat is raw. Not disparaging how you like it, just sayin...

And I would recommend you don't try lamb if you can't handle the pink. Even well done lamb (which is a sin) is very pink.

High heat cast iron + bring steak to room temp first for an hour

Very important to do this, and allows for meat to be cooked easier. Good too mention that.

I used to order well done, but it would be dry. Restaurants around here seem to consider medium well, brown throughout, but not to the point of getting dry.

Eh I've actually eaten pink chicken... and even chicken that was basically red.
Color says nothing of actual doneness. :p

So I am actually fine with pink chicken as long as the place making it is to be trusted.

Please note I would never cook it myself like that but yeah.

Also note it is much easier to get food poisoning from undercooked chicken then even a raw steak.
