Every weapon has pros and cons. Be aware that laws vary WIDELY from place to place, so you should check anything out with local PD.
Knife is useless outside of melee, so if the opponent has anything with range he wins. It can only be used as deadly force, therefore is seldom allowed by law. It requires EXTENSIVE training to be any good. It can be taken and used against you with lethal results.
Chem sprays have some small range, and can be used for other than lethal results (allowing their use more often). However it takes a little training, you'll hit yourself as well (guaranteed), and not everyone is equally affected by them (or sometimes at all).
