I am roasting a 5lb peameal bacon roast. I will be serving it with mixed veggies and whole wheat garlic bread.I've reading around the web and it looks like barley is good for diabetics due to increasing the body's ability to control blood sugar levels. And it can also lower cholesterol as well.
Well I'm diabetic, and have high blood pressure, so eat more barely? So I'm planning on eating more barley, lentils, split peas, and brown rice along with onions and garlic. Maybe go two or three days a week without eating meat?

It's a lot like a ham without the smoking. It can be expensive here, too. I wait for sales before I buy it.

You have to cook it though. I did mine @ 375F covered for the first hour then uncovered for about 35 mins until internal temp was 160F - 165F. Let it sit for a bit then slice away.
