Anyone use Pearled Barley?

I've reading around the web and it looks like barley is good for diabetics due to increasing the body's ability to control blood sugar levels. And it can also lower cholesterol as well.

Well I'm diabetic, and have high blood pressure, so eat more barely? So I'm planning on eating more barley, lentils, split peas, and brown rice along with onions and garlic. Maybe go two or three days a week without eating meat?

I am roasting a 5lb peameal bacon roast. I will be serving it with mixed veggies and whole wheat garlic bread.

I might buy some from the link I posted above, but it would be a once in awhile thing.
I like buying the roasts rather than the pre-sliced stuff.

You have to cook it though. I did mine @ 375F covered for the first hour then uncovered for about 35 mins until internal temp was 160F - 165F. Let it sit for a bit then slice away.

Can you cook this in a slow cooker? Or is baking or frying it the best way?

I don't know about slow cooking it.

I only bake mine as I find that easier.

I should post some pics tomorrow.

Thanks. when I buy a chub I will try this out. Is peameal bacon normally bake with maple syrup?
no, you can make it any way you want. Some people like having some kind of glaze on it. I prefer the old school, plain way.

What about frying slices with onions and garlic?
you will need a very sharp knife if you want to slice up an uncooked chub.

frying it with onions and garlic sounds great. you could even throw in some peppers, too.

The only downside of peameal bacon, besides the cost is I have high blood presure and need to watch my salt intake.
