Went to a different Costco yesterday to get some other good stuff not carried at my preferred club such as a Greek cheese.
Also got 6.5 lbs of pork belly. I'm a single guy but this is all easy enough - split the pack into two, put them in ziplock freezer bags, I'll cook one portion in the next two weeks, and the other a month later. Bought the lightest two pack of flank steak. Froze one, other is in the fridge to cook on Mon/Tue.
Also found three packs of organic tempeh. Bought two, put one in the freezer, and will cook the other over this next week. Giant bag of cape code tuscan chips, the amazing fucking deal of delicious nine nearly 1L cartons of chicken stock for nine bucks. The 9 L of organic coconut water. Found a delicous container of Ithaca jalapeno lime hummus which turned out to be my favorite store bought hummus of all time. Got the 10lb tube of ground beef for the dog you have to ask the butchers for. Raw honey for me yogurt. And some other things.
Costco can totally work for a single person if you shop deliberately.
