Sacrilege, I know...but I do prefer beef ribs to pork. ...perhaps b/c they are far less available than pork.

Still, Eastern NC BBQ + Brunswick Stew + boiled potatos + green beans > all else
 
Definitely Carolina/Eastern BBQ and particularly, Lexington-style

If you have to dump any sort of tomato-based or mustard-based sauce over the top of it, then your BBQ isn't good enough to carry its own weight. A simple vinegar-based sauce is the best. As is using the shoulder of the pig, slow cooking over wood and serving with "red" BBQ slaw.

I'm from Lexington, NC so I'm biased of course 😀
 
I'm going KC on this one. I ate at a Gates BBQ down there and it was awesome. Granted I do love Texas brisket too. To me BBQ means PORK, PORK, PORK, and more PORK. Also the hotter the better for me. 🙂

1. irrelevant. bacon is good, so is ribeye steak. neither has to do with bbq
2. yes, larger, smokier ribs
3. sausage is mashed up leftovers. not q. doesnt matter
4. brisket tastes better

There are a ton:

- Gates is likely the most famous, and it is very good.
- Arthur Bryant's is possibly the next-most-famous and sadly it is the one I have not yet had.
- Oklahoma Joe's is my favorite. Z-man rules all brisket sandwiches in the KC city limits, and their ribs are fantastic.
- Zarda's is good, but with so many better choices, I don't recommend it.
- I went to school in Warrensburg, MO, and a place there called Perry Foster's is the best brisket sandwich I've ever had. $3 will get you around 4 lbs of wonderful meat. Cheap and delicious. Now if they would just stop getting shut down for health code violations. They have pictures all over the wall of the famous people that come to KC and will call them and have them run up a huge order of meat to them - Kid Rock, Charlie Daniels, the late Derrick Thomas, and others I can't remember now.

The single best dining experience for BBQ in KC (probably the world) is Fiorella's Jack Stack.
- Their sides are the best, whether you go with their Cheesy Corn Bake (corn in a cheesy sauce with bits of ham in it), their BBQ beans (TONS of chunks of delicious beef in there), or their onion rings (thick, comes out with a variety of their sauces for dipping).
- The atmosphere varies between locations - very homey and cozy in their original location in Martin City, very classy up north across the tracks from Union Station, and in-between at the Metcalf location.
- The single best BBQ dish in KC is also there, and IMO settles the dispute between pork and beef ribs (though I love both) - the Crown Prime Beef Rib plate. As you can see, you get a ridiculous amount of meat, and it comes with two sides.
 
I voted KC. I'm planning on trying to get the Fam to the KC BBQ fest this year. Hopefully the chemical fire is out by then 🙂

Then why didn't you list any good ones? Although Jack Stack is decent, but the only one worth going to is the one in Martin City.

Gates and Bryants are the McDonalds of BBQ. KC Masterpiece is worse. For good BBQ you have to stay away from mainstream places. BB's Lawnside is a better known hole in the wall that is worth going to. L.C.'s on Swope Parkway is probably the very best in town. Midwest BBQ in Raytown is also an excellent place to go.

OK, first off, it's clear to me that you are one of those people that feel that if a place can actually pack the house on any given night or be successful enough to expand, they are sell-outs and their food can't taste good. I tend to just taste on.... taste.

I've lived and worked in KC for five years, and if I'm reading you correctly, you are the first person that has ever claimed that the quality of food from Jack Stack is different by location. Jack Stack's quality has been 100% consistent at every location. The Martin City one does have the best atmosphere, but that doesn't effect the taste and it's only a matter of opinion.

Arthur Bryant's has three locations, and the original is in a spot that most people would tell you to avoid at night. To claim it's not just a hole in the wall that has succeeded SOLELY on the basis of taste is ridiculous. Gates has 6 locations, but they're all around KC. You're faulting them for having quality and being popular enough to expand? C'mon.

I agree that KC Masterpiece is poor. Way over-priced for mediocre food.

How can you miss Okie Joe's? They started as 1/2 of a gas station! You don't get more hole-in-the-wall than that!

Edit: One weekend I actually went to two different Jack Stack locations and got the same thing out of curiosity. Not an ounce of difference that I could sense. Again, atmosphere is great, but if that is your thing then say it. You're obviously discounting the taste of places that don't have that hole-in-the-wall or down-home feel and I'm sorry, but that is not right. You should judge them as if they were all in one long line at a show and the atmosphere was the same.

I probably like a great dry rub on my ribs vs. a great sauce, but the best rib I've ever eaten (Crown Prime Beef Rib from Jack Stack) has BBQ sause, albeit not much, so I can't discount it.

Another biased eastern North Carolinian here. I haven't had the pleasure of tasting any other styles of BBQ mentioned in this thread. My g/f is from Texas and always speaks highly of brisket. I need to try some in the near future.

I would have to disagree with you on that. Here is my ranking of the place I have eaten at around Austin multiple times:

Salt Lick > Rudy's > County Line ~= Pok-e-jos

I used to eat Rudy's every Friday for about 1.5 years...the "sause" is good (although too salty sometimes) and sometimes the extra moist brisket is right on. I didn't find County Line to be anything special. Pok-e-jos' BBQ is consistent, but not amazing. Their sides, however, are pretty good (cheesy potatoes, cobbler, mac&cheese). I just had Salt Lick 2 weeks ago, and it was awesome as usual. To be fair, I should try out some of those other places around Lockhart and Elgin sometime and judge central TX BBQ according to that.
