It's a matter of preference. Hence the pole. I travel to texas a ton....just not my style.

It can get darn near religious in what type one likes.

TX is very heavy on the hickory (and no surprise heavy on the beef). While very good, the smoke adds too much for me and takes away from the meat. It's all a matter of taste....neither is better than the other.

You obviously havent had good BBQ from Texas then. Good Texas BBQ isnt chewy. Not only that most sauces used arent super sweet, most places I got have a mildly sweet twang, with a spicy kick added in and they have runnier consitency not a pastey ketchup consitency. Not only that sauces are typically served on the side.

See in Texas we dont limit ourselves to pork, we BBQ everything. And no I dont mean grilling, I mean BBQing.
And when it comes to ribs, the vast majority use dry rubs, not sauces.

Hopefully I can have some good Texas BBQ sometime soon.

If you are ever on the south side of Houston try Ryan's Smokehouse , tiny little place and kinda hard to find but awesome bbq, my favorite thing there was the loaded baked potato.... mmmmm....
That is the thing I miss most about Texas, there is only one OK BBQ place I have found here, and their brisket tends to be dry. :(

I'm from NC, so I'm obligated to say NC's pork BBQ is the best.

However, I really do like the Kansas City style BBQ.

I'm a "find a hole in the wall BBQ joint and they're probably gonna be the best around."

But that's why I put up the pole and why we need a good BBQ discussion. There's 4 basic styles. What you like is probably related to where you eat your BBQ.

I swear to all of ATOT that I will do a whole hog one time. This I do promise. It will be much larger than a single alternator - it will be the size of a large pig. And she shall be smoked for 1.5 days or longer and feed a hundred people.

Agreed... The only time I might think of eating pulled pork is on a sandwich from time to time. Other than that, BBQ means brisket and so on. :)

you sure as hell haven't had texas bbq if you think its about sweet sauce. the best texas barbeque doesn't have sauce. it's that kansas city sh!t that pours sauce on everything like it's okay to drown the meat. kreuz market > you

[as an aside, there are 2 different kinds of texas barbeque. there is the central texas kind brought here by german immigrants which features either no sauce or a thinner and spicier sauce; and there is the east texas kind brought here by freedmen moving west out of the deep south, which has a sweeter sauce. it is generally recognized in texas, however, that the central kind is superior to the eastern kind]

damn right. beef, pork, chicken, turkey, quail... hell, i've had a barbequed hot dog. while you're waiting for that turkey to smoke you put a few hot dogs in there... mmm...

Its almost at the corner of Nasa Rd 1 and Highway 3. Easiest way to get there is take Hwy 3 south from Bay Area Blvd and take a right on Henrietta, its the last street before you get to Nasa Rd 1.
The brisket is awesome, sausage is good. Get the loaded Baked potato, you won't regret it. (Though your cholesterol level might.)

When I'm in that area, I'm usually on Nasa Rd 1 traveling south. I know the intersection you're talking about (it's a bitch in traffic).

According to Google maps traveling my normal route, I'd have to turn right onto Hwy 3 and almost immediately turn left on Henrietta. Does that sound right? After I turn, is it on the left or right side?

I know. I've BBQ'd them all. But the pig is oh so the best.

Texas BBQ means beef....everywhere else it's pork. I far prefer Texas for the briskett and beef ribs. Booya.
