Isn't anything with BBQ sauce, called BBQ. I mean if I grill pork chops and lather it in BBQ sauce, that is BBQ right.

No. REAL BBQ is the process of slowcooking meat for hours over charcoal and smokewood in a low, controlled heat.
Grilling and slathering in BBQ sauce is simply grilling and slathering with BBQ sauce.
The last time I did pork shoulder it was a 16 HOUR cook.

Most west of the mississippi don't even know what BBQ is. Save for tx and st. louis. But they don't generally count because they suck so much.

Thelmas kicks some major ass ! Go early, prepare to wait in a long line and keep your mouth shut. That woman will bitch-slap your happy ass right out the door if you complain about the wait or a screwed up order... but it's the best BBQ in Houston (and cheap!).
i believe none of us ever said that sauce can't be used. our main beef was the op's comment that texas bbq has some sort of very sweet sauce on it. which it doesn't. and, in fact, some of the best joints in texas would throw you out of the place for putting sauce on it.Originally posted by: Ilmater
As for someone that said that sauce wasn't a valid way of making BBQ and you should make it without sauce, that's crazy. If you don't use sauce you use a rub, and really, what's the difference? They're both substances that cover the meat and give it a different flavor.
