A Latin friend of mine told me once that Tapas are plates of snacks that bar chefs would prepare using left over food.

Back then, if you were sitting outside, the waitress would bring it to you and you'd set the little plate on your beer to keep the flies out, sort of as a "top".

I guess they've evolved a little since then.

yes, it's true. Proving once again that there isn't a shitty, garbage-quality food that yuppies haven't adopted and redefined as "fancy."

Anyway,

Middle Eastern cuisine is nice for a change, but not particularly versed in the art of "making things good". Aside from Hommous, they will easily give you a completely unsalted chicken, they'll have the flavour profile of two servings of the same dish being completely different, they are basically not really concerned with taste.

African food is .. nice. They use unusual spices which leads to unusual flavour profiles, while nearly every non-african cuisine shares the same spices. I don't have nearly as much experience as i would like, as mine only comes from a few restaurants in London.

Caribbeans is very similar to African. Tons of spices, it's good eatin', but you'll get used to the spices pretty fast and it loses its magic. Note the correct usage of its and not it's.

Eastern European food is garbage, including whatever it is that Germans call food.

Indian food is horrid, and you will say "oh but you haven't had REAL indian food", to which i reply bullshit, real indian food is even more horrid.

When your spices have completely destroyed the base taste of whatever it is you're cooking, you cannot be considered as "cuisine" but rather how-to-make-shit-edible.



having had extensive experience with food over many continents, i got to say, America is where you find both the best and worst food.

You'll get burgers from places where it's cardboard that vaguely resembles beef, but you'll also get awesome BBQ, Clam Chowder, Clam Bake, cheap yet well made sushi, if i had to pick, i'd go US any day. Steaks, brisket, crab, lobster ..

You still haven't learned to cook spaghetti, but i can live with that.

Same with the special of the day...it's not special lol...it's just whatever is expiring in the kitchen pantry, especially if it's something expensive like meat. "Ah yes, our special tonight is the Steak au Poivre", aka the meat was going bad so we covered it in peppercorns & poured cream sauce all over it, bwahahaha :D

And German foods are great too. So many different sausages! Oooh, and an excellent fusion I am dying to some day try: Currywurst!

well, i make my own pizza. i make my own sushi. i also make my own hommous. and my own tajine. i have baccala for dinner, which, surprise, i made myself. i also have recently made oxtail, tripe, and a bolognese that took me 2 days to cook. i make my own stock. i make my own dim sum, i bake my own cakes, and i'm really not too far from making my own butter. i've got an entire serrano hanging in my shirt closet, and everything from caribbean to chinese spices in my kitchen, and that doesn't mean five spice. i make my own dashi with katsuobushi, and think nothing of making myself some handmade ravioli with scampi heads fume with sweet parmesan sauce. i also make my own jerk, creme caramel, tiramisu, aubergine parmigiana, ratatouille made-to-look-like-the-film, basically if you look at binging with babish or foodwishes, they got nothing on me. iv'e worked 6 years in restaurants (which turned out to be a mistake) and have been into gourmet foods since the 80s. i've made char sui, aromatic duck, just about every chinese dish you can name, quail, pheasant, goose, i even made my own rillettes. i've had tajiine at La Mamounia, my mother's family are fishermen from Coratia. My dad comes from a aristocratic family and i grew up with eggs benedict for breakfast. we have had Luigi Veronelli (the guy who edited La Grande Cucina of the world's second greatest chef Luigi Carnacina) praise the food in our house, so i'm preeetty confident i'm on the right track.

i've spent more money on sushi in my life than i have on drugs. if you want to put me on ignore, go ahead.

fusion cuisine is no different than fusion as an energy source: an impossible dream that leaves nothing but shattered dreams and wrecked lives in its wake.

while I generally agree with this sentiment, Vietnamese cuisine is proof that fusion can lead to excellent results.

Sushi is for people too lazy to cook.

more work goes into a piece of high level sushi than most steaks. They may not be cooking with fire, but looking at sushi as sliced fish on top of rice and requires no cooking is a very simplistic, low-level view of sushi.
