Fish sauce should only be added when cooking, not after. Otherwise, you meal will smell, well, fishy.
But fermented foods is extremely prevalent in Asian culture so they are definitely eating stinky foods
Fermented food doesn't have to smell bad. We have tempeh and standard soybean tofu that smell neutral.

Love stinky tofu. Will not eat durian and natto. I don't know what hard core fish sauce it though I don't mind fish sauce.
Stinky tofu is just one of those things that i won't try, balut is another...

I've had durian a number of times now and i don't understand the appeal

Mắm Nêm is a very pungent Vietnamese sauce made with fermented anchovy, crushed pineapples, sugar, lemon juice, Thai chili pepper, lemongrass and garlic. It is a hard-core alternative to wherever the more widely known Vietnamese Fish Sauce Dipping Sauce (Nuoc Mam Cham) is used, and best alongside beef dishes as in Vietnamese Lemongrass Grilled Beef (Bo Nuong Vi).

Ah, now I get it. It's nothing like surstromming, not even close.
Based on the ingredients alone, I bet it tastes not as bad as it looks.

surstromming is stored in a way that you eat the shark at peak fermentation, while nam pla and other sauces based on rotting fish are well past the rotting time, when all the nasty bacteria has died.


now, since someone has mentioned surstromming (which is basically the Hitler of food threads), someone needs to make a thread called what is the worst food you have ever eaten.

Fermented food is not limited to Asian culture. Pickle, cheese, wine, beer, dry aged steaks and meat, fermented fish, sauerkraut, etc. All found in Western culture. Swedish eat fermented herring fish. You have Iceland people eating fermented shark. Norwegians also eat fermented fish. You have people in Greenland eating birds that are fermented inside seal skin. And if eat Worcestershire sauce on your burgers and stuff, that sauce has fermented anchovies. Romans ate fermented fish sauce and Worcestershire sauce is sort of based on that.

Many fermented food is acquired taste. It's like beer. Not too many people love beer first time they drink it. But over time they develop a taste for it and love it.

I can generally eat almost anything but I struggle with some fermented foods. I can't really eat and enjoy fermented skate but some people love that stuff. Powerful ammonia smell and taste just overpowers me but some can't get enough. But I love fresh skate. Tastes like scallop.

I can pretty much eat anything but that maggot cheese that they make in the Italian boonies. Nope. No thank you.

fermented skate

i've worked in a fish & chip shop and rotten skate is the most disgusting smell i have even been exposed to. (i dont find Durian smelly at all) i cannot imagine a human being eating that, to me, that's way beyond the 2girls1cup stage.

i have not tries surmstromm, and frankly i do not want to.


and @Chaotic42 that stuff is from my home country (although not Rome, but rather Sardinia), and i'm pretty sure i would find disgusting that it has live worms in it, but as i understand it, it's basically a really strong blue cheese in taste.



We romans have a thing called pajata, which is the baby cow's intestine. As the cow has only been suckling milk, there are no faeces in there . kinda. It's basically milk-shit.
So they cook it, and the taste ISNT BAD but when you walk in the front door and your mom has been cooking pajata, by god the house smells like shit. And no i dont mean figuratively.

french is the greatest. You can fuse french with any other cuisine on the planet and create amazing dishes. Its literally the glue that can gel all cuisine.

i looked up pajata. That looks damn delicious. I would totally eat that. If you eat adult cow intestine, you end up eating some shit even if you clean it well. Baby cow intestine with milk shit is nothing.

Natural cased sausages are the best. I just think happy thoughts while eating them. I wouldn't eat a bowl full of intestine, unless it was served to me for dinner. If I'm at someone's house, I eat what's prepared for me. It would be rude to decline.

why not? It's popular BBQ meat with the females in South Korea. Grilled intestine is called gopchang. Females think all the collagen is good for their skin so they eat it. It is said that eating intestine wasn't that popular in Korea until the Japanese occupation. The Japanese took all the good parts of the cow and pretty much left the Koreans with the ox scraps and intestines. You have to be open minded or you'll miss out on some great food. Most people here have the food palate of a child.
