what are your ideal lunch meat/cheese combinations?

I had a ham and provolone sandwich today because ham happened to be the only meat I had in my fridge and I wanted to use up my provolone... it was pretty not great. got me thinking, though, what are your preferred meat/cheese combinations?

based on the deli meats that I buy on a regular basis...

ham = american, cheddar, or swiss
buffalo chicken = american or cheddar
chicken / turkey = anything
salami = only provolone

Blimpie Best is pretty good. Ham, salami, cappacola, prosciuttini, provolone, and whatever else you have them put on it.

i don't think buffalo chicken counts as a deli meat. but if i do get it i usually have it with blue cheese.

i like swiss, gouda, pepperjack, or provolone with the deli meats.

Roast beef with Pepper Jack or horseradish cheddar.
Corned beef or Pastrami with Swiss.
Ham with Swiss, Sharp Cheddar or Colby.
Salami with Cheddar, Monterrey Jack, Colby or Cream Cheese.
Turkey with Swiss or Monterrey Jack.


edit: Turkey can be plain or smoked. Ham can be Peppered, smoked or maple cured. Country Ham (salt cured) needs a stronger cheese.

Jarlsberg and Havarti can be substituted for Swiss as desired.

can't believe people eat salami/cheddar... I almost threw up a little :\
Cotto Salami on whole wheat with medium cheddar, mayo, peanut butter & iceberg lettuce. AKA ambrosia.

pastrami + whatever. it doesn't really matter once pastrami is involved.

I love me some salami + provolone.

bonus points for boar salami + pecorino.

Turkey and ham with just about any cheese
Salami is by itself. It's too good to ruin it with cheese.

Prosciutto and fresh mozzarella. Delicious.
I also like mortadella and american or provolone.

I've found I'm much pickier about the lunch meat than I am the cheese, as long as the latter is decent. I like the Italian varieties more than anything, probably because I grew up with those, but Virginia Ham is also ridiculously good.

I don't like lunch meat so much. The only time I get it is the occasional Italian sub when I'm out. I make cheese sandwiches/subs though. My top cheeses for that are cheddar, Swiss, and provolone.

when i visited sedona i ate hot corned beef with melted swiss with a side of bleu cheese dipping sauce......

one of the best sandwich i've ever had.
