Packing a lunch for less than 2$ a day instead of eating out for 6-10$ a day
Its nice that most of those things are enviro friendly too, but the pocket book is el numero uno.

I can't possibly imagine a healthy meal for under 2 dollars please educate me.

Well, I'll give it a shot:
My usual packed lunch + snacks:
Sandwich (turkey on rye, pbj, ham and swiss, it varies)
Apple
Small bag of chips or crackers ($7.88 for a box of 50 at Costco)
Granola bar
2 Oreos
I'll eat the apple in the morning, the granola bar in the afternoon, and eat the other 3 for lunch. Ice water to drink.
Easily under 2$
