That's the actual shuffle, followed by a really quick bridge. That's the "pfffft" sound.
I've played cards so long it sounds exactly like a shuffle. A good one, followed by a bad one - that's the slap, slap, slap you hear.

Hmmm..that is a tempting next guess...what if they sped up the sound a bit that would help justify the speed of the "bridge" followed by another shuffle too quickly..
