My issue with homemade fries is dealing with the oil and double frying it. I've never had any luck single frying it. Always turns into soggy wet mess. Double frying solves the soggy mess but you have to fry it once and cool/freeze and fry it again. That takes time. I could do batches at a time and freeze it but I don't like dealing with the hot oil. It's really more hassle than it's worth.


I co-owned a food truck once. We sold yukon gold twice fried frites. I'm a believer in double frying fries. We had 5 stars on yelp with 25 reviews. But the Shake Shack crinkle cut fries are pretty good. I wouldn't call them the best ever by any means but they are good. Fresh hot McDonald's fries are definitely better. You just can't eat them less than hot. They start to suck pretty bad.

Everyone double fries because almost everyone uses precooked frozen packaged fries from US Foods or Sysco. Fries are one of the few items that's better buying prepackaged. Since it's already been fried once and frozen, it saves you time at the restaurant since you only have to fry it one more time. And the frozen fries are cheap so the tradeoff in cost vs time is worth it. My BIL used frozen crinkle fries from both US Foods and Sysco at his wings and sub shop. It's the same shit Shake Shack uses. It's nothing special.

If you don't double fry, you end up with inedible fries like the crap served at In-N-Out. Who cares if it's fresh cut at the store when it's absolute shit? Double frying it would solve their problem but I guess In-N-Out care more about their fresh food image than tasty fries.

I thought Zaxby's was national but looking at their location maps, it's pretty much only in the Southeast. I always took CFA and Zaxby's for granted. Guthrie's should open locations in Northeast, West, and Midwest before Zaxby's expand there.

I've probably been through 20 cutting gadgets between what I have, what my buddies have, and what I've bought off Amazon/eBay/etc. Per Quora:

Same here and I would never pay the regular price but 3 strips + 2 sides + 1 biscuit for $5 is hard to beat.

Good chance I'm hittin' up Popeyes this weekend. This one looks pretty good too...

It's the way to go. Soaking the fries first is definitely a clutch move.

99% of the time the fries came out perfect on the truck. There were these random times they came out shitty. It wasn't the oil that wasn't fresh, we eliminated that variable. We always bought the same brand of potatoes. My only theory was the fryer temperature gauge was wonky. It was a pretty good brand 40# fryer. We used it for our falafel too, and that always came out perfect. So who knows.

But yeah - Yukon Gold potatoes. A nice soak. A par fry. Then a second fry and you should be good to go. Served with a nice aioli.

Tried Popeyes for th first time. The $5 box with strips, fries and red beans and rice was pretty good.

Had the Surf & Turf for $5 recently (usually order the chicken tenders). The red beans & rice is my favorite side.

Went to my every 2 year or so visit to White Castle to remind myself it's not worth going.

Usually it's good but then shitty. This time is was shit then shittier. I may not go back in another 2 years. That is all.

My router dropped the IPv6 connection to Comcast again after 45 hours uptime. I just flashed it to a Merlin alpha release to see if things improve any. Then again this is day two with a roofing crew overhead making tons of noise making it hard to study or research anything.

McDonald's is switching to fresh beef patties for the Quarter Pounder next year. I don't know how I feel about it. Quarter Pounder with cheese is what I always order at McDonald's. Fresh can taste better but there's increased chance of food safety screw ups with the switch and lazy employees. If the McDonald's location isn't clean, I'm going to switch to ordering Big Mac next year.
