I don't see Tebow playing any TE with the patriots. Between Ballard, Gronk and Hernandez they are pretty much set. I don't see him coming in on short yardage downs either, the Pats with Brady are actually incredibly successful on short yardage - no gimmick needed.
Overall I think he's going to be the QB to prepare them for the mobile opposing QB's, and then play some slot back, punt protector or some other gimmicky plays.
One thing I am very confident in: the patriots won't be as stupid as the Jets. The Jets traded for him and signed on for the Tebow circus, without any plan for what to actually do with him. They endured the circus without ever using him or getting benefits. If the Patriots keep him on the roster, they're going to use him and get benefits from it.
