So, I just made a homemade pizza

I eat pizza at least once a week. I KNOW how grease works. This was different.

Cheese is mostly fat and water.
 
I figure the combination of tomato's and oil you used caused the melted cheese to absorb some of the coloring, mixed with it when it melted. If you were a scientist you could make n different pizza's, changing the combinations of toppings you used slightly each time to determine the cause.

not likely, the oil was on the bottom, and the cheese on the zucchini that never touched the tomatoes is the same color.

I'll just have to see if the fiance kicks the bucket tonight. She was a little petrubed at being called the "sex-giver", but we'll see how that plays out...
 
can you say what brand mozzarella you used? was it expired?

i've never seen that before after baking. even the cheese on your zucchini turned that color... and it didnt look like the zucchini was topped with tomato sauce.

grease usually pools in cavities, and this doesn't even look like grease, it looks like it is the cheese.
 
Looks like it obsorbed something from the pizza sauce. Probably something to do with the heat.

By the way, next time mix provalone and mozzarella. That's what all the best pizza places do. (3 good places that I know of anyways) Provalone is better anyways.

ah yes, i know of that too... provolone, more expensive, has more flavor than regular mozzarella, and when melted has a very stringy consistency, so it adds to that melted cheese pull affect... subjectively desirable.

also, use low moisture mozzarella for pizza... or fresh moz when doing pizza margarita.

Grease == oil == fat

Cheese has lots of fat, that's why it's so good for you.
 
it was sargento cheese....wasn't burnt, and wasn't puddles of grease. as an experiment, I left the bag on the counter overnight, and the cheese all turned an orange color.
 
It's burnt cheese, dude... when cheese burns it turns a brownish orange, just like almost every other kind of food...

err cheese has FAR FAR more grease than meat.

dude, it WASN'T burnt cheese. I eat cheese in some form EVERY FRIGGIN DAY. I know when cheese is burnt. Besides, I guess you have an explanation for how the cheese left on the counter got "burnt"?
