I ended up working my butt off junior/senior year in extracurriculars and volunteering to balance out the fact that my GPA was less than stellar (I mean, not terrible, but in the mid 3's)

Perhaps you should have spent your junior/senior year focusing on your studies more rather than running for class president or participating in extracurricular activities?
