Those are cheese curds. They're quite tasty, have a 'particular' texture though that a few people on the planet may not appreciate.The clumps of 'cheese' that look like gobs of fat is not appealing at all.
Cheese fries are great. I use melted or shredded cheese, not gobs of clots.
Gravy on mashed, sliced or baked potatoes is great.
I don't see mixing those.
I've only had poutine a few times, but in my limited experience I agree with Red Squirrel. Don't get poutine in a sit-down restaurant. I don't understand a strong love of poutine, but it tastes fine.Is that at a sit down restaurant? They never have as good of poutine as actual chip stands or dedicated poutine take out places, at least I find.
I'd certainly eat it, but kinda feel like shifting from brown gravy to pepper gravy is moving away from qualifying as poutine.Poutine, like a lot of starch base dishes, is a lot more fun when you make it at home and customize the toppings to your hearts desire.
