My point is that people start talking about "authentic Chinese food" in blasting PF Chang's but have no idea what it actually is (which, correct me if I'm wrong, should be what's actually served in China). I'm not talking about peasant food, but I think what's served at a Chinese hotel passes for Chinese food, right?

LOL, did ever think about why they changed Chinese food when they came to America? Mainly because Americans didn't like the authentic stuff.

That said, I am really not a fan of exotic stuff - snakes, squids etc.

I don't want real Chinese food. I've seen English translations of the second menu Chinese restraunts keep just for Chinese people, and that sh|t isn't very appetizing. Worse - I've seen Chinese people ordering and eating stuff off it. It's vomit inducing.

PF Chang's is good because it's a lot cleaner and nicer than the typical Mom and Pop Chinese restraunt. Nowadays, the only time I ever get Chinese it's at PF Changs.
 
First off... the PFC I always go to rocks. Chang's Spicy Chicken or Mongolian Beef = win.

Second... it's not chinese. It's American Chinese. Everyone there will tell you it's American Chinese. It's not authentic Chinese, it's Chinese as prepared by American chefs. It would be like going to China and having a Chinese chef making you a nice big apple pie.

You want "authentic" Chinese... go to some city's China town... or better yet... go to China.

You're aware that any kind of authentic cuisine will have its more questionable items, right? If you've ever cared to dine at any fine French restaurants, for example, you'd realize that French food can be something deliciously exquisite like a Roti of Quail and Squab stuffed with mushrooms and Jus with Truffles just as much as it could be a platter of fried escargot (snails) and frog legs. The same goes for Chinese. Or Indian. Or whatever.
"Real" food of any culture encompasses so many different categories and styles that to say that a certain country's authentic style of cooking is "butt nasty" is just silly.

Yes, I've had all kinds of "real" Chinese food, and it's been anything from absolutely delicious to downright questionable, to put it charitably.

Overgeneralizing is stupid.

You're making a mistake by lumping Americanized Chinese food (e.g. Orange Chicken, Chop Suey) and something like, say, Schezuan cuisine or any other region-specific culinary style into the same category.
And Americanized Chinese food wasn't created because Americans didn't like the authentic stuff. Chop Suey, for example, was created when Chinese chefs had a bunch of leftover veggies, didn't know wtf to do with them, and stir fried them together with some sauce. For whatever reason, it became a hit.

I'd go on, but Wikipedia has already done the work for me, it seems.
