That retarded Dinosaur show. Terra Nova.
How about shows that were cancelled BEFORE their first episode:

How about Rubicon

or The Dresden Files

There's got to be a producer or writer out there who could spill the beans on what was supposed to happen in season two. My googling hasn't found anything though.
I really liked Kings as well. There was some good acting in that show and I watched every episode as it aired even though I figured it wouldn't make it. It was an ambitious show that was very hard to sell to people.Kings
I'd still rate is as one of the best shows in the last decade.
also, "Huge" on ABC Family (funnily enough, featuring Firefly alum Gina Torres)... that show was really, really good. like, My So-Called Life good. but obviously it wasn't featuring hot people, so it tanked.

I also loved Jericho although a fan campaign got them to make a short second season just to finish off the story because it ended on such a cliff hanger.
Studio 60 is another show I really liked that hasn't been mentioned yet. It came out the same year as 30 Rock so everyone knew only one of them would make it.
ABC announced the cancellation of Police Squad! after four of its six episodes had aired in March 1982. The final two episodes were aired that summer. According to the DVD Commentary, then-ABC entertainment president Tony Thomopoulos said "Police Squad! was cancelled because the viewer had to watch it in order to appreciate it." What Thomopoulos meant was that the viewer had to actually pay close attention to the show in order to get much of the humor, while most other TV shows did not demand as much effort from the viewer. In its annual "Cheers and Jeers" issue, TV Guide magazine called the explanation for the cancellation "the most stupid reason a network ever gave for ending a series."
