I heard most is actually smoked lightly just to kill bacteria... not sure how true it is though

that's unfortunate, cause there's nothin like a nice piece of raw tuna with some soy sauce and a crap load of wasabi... yum yum

I need to go back there, but we've been partial to the menu selection at Kitakaisen down at the Chatan Sports Complex. Much more for the non-sushi eaters like my wife, and they have a full selection of sushi, sashimi, and pretty much anything else you could want (the gyoza is awesome!).

Can't say I like scallops raw though -- it's like eating snot.
