Today was a good day. I went to Costco to browse and ended up coming home with 90 pounds of meat. Got some chicken quarters in the smoker for dinner tonight.

40 lb chicken quarters
12.06 lb beef boneless chuck short ribs
5.63 lb beef top sirloin cap
12.86 lb beef top sirloin cap off
12.18 lb untrimmed pork spare ribs
6.57 lb pork riblets

Home Depot and Lowes started their annual Memorial Day Kingsford charcoal sale. Two (18.6 lb) bags for $9.88. I'm down to about half a bag of Kingsford so I was waiting for this sale.

I read good things about Royal Oak lump. I think they make the lump for the Big Green Egg company. 15.44 lb of Royal Oak lump is $9.97 at Home Depot right now. That's good price for quality lump. But Home Depot had one day sale the past Saturday on 5/20, and had the Royal Oak for $7.88 which I missed. I still have about 160 lbs of Kamado Joe lump that I picked up from the winter Costco roadshow. Publix also has GreenWise lump charcoal (8.8 lb) for $5.99 everyday price. That's pretty good option if you run out of lump and there's no sale.

I'm starting to question the need for complex rubs for pork or beef. I just smoked some pork spareribs without any rub or seasoning and it was great. It was for my new puppy and I tried some before giving her some. It was slightly bland because it didn't have any salt or pepper but I could really taste the pork and the smoke. It was seriously great. My wife commented if it had little salt and pepper, it would be better than the commercial rubs I use.

Bought a new toy. Should be delivered next week sometime.

Joetisserie (rotisserie attachment for the Big Joe). Can't wait to do some picanha (if you haven't made it yet... do so), chickens, pork butt, etc.

I smoked some commodity pork spare ribs yesterday. I wanted to try the hanging and foil method instead of straight hanging. 3 hours at 300 F in WSM. Then wrapped it in foil for 1 hour with some butter, brown sugar, and honey. Turned out great.

Today I have some pork butt bone-in on the Big Joe. It's the first time smoking one with bone. My local Costco only has the boneless. I bought this one from Costco business center. Smoking on Kamado Joe lump at 275 F with some apple and hickory wood. I also added two halves of Vidalia sweet onions to the lump charcoal to add some sweet onion smoke.

yep. $300. doesnt seem to be cheaper anywhere. got it from bbqguys.com so free shipping/no tax/something like $10 cashback from some cashback site.

Just ate crazy amount of pulled pork. I wrapped the butts in foil after 6 hours and cooked another 2 hours in the foil. I removed it when the thermometer read 198 F. Rested it for about 45 minutes before pulling. The bone pulled out cleanly.

Keeping it simple for Memorial Day. Couple racks of St Louis ribs... in a food coma now. The four of us polished off 1 rack. The other one will feed my belly for lunches this week.

Good looking ribs! Yesterday, I restored my Lodge Sportsman cast iron grill with plans to cook some Korean BBQ today on the back deck tabletop but the rain was too heavy. It's probably best as I've been eating too much of the leftover ribs and pulled pork. I've had number of pork sandwiches. Pulled pork nachos. And pulled pork and mini tacos for breakfast. I just finished eating Shin Ramyun Black with pulled pork. That's great combo The beef broth of Shin Ramyun Black pairs well with the smoked pulled pork. The pork definitely adds richness to the ramen. With the remaining pulled pork, I'm going to make pulled pork tacos and some brunswick stew.

Today I trimmed some low hanging branches off the big oak tree in my yard. I still need to cut it up and season the wood but I should have good 100 pounds of oak wood for smoking. Unless I buy stick burner offset, I should set for life as far as smoking wood.

Anything special to drying wood out for smoking? I have a shit ton of peach, mango, lychee, and other fruit wood that I'd like to experiment with rather than just hauling to the curb when I prune the trees back.
