Pull it off the smoker when you normally would. Wrap it in an old bath or beach towel, then another, thicker towel outside that. Place the wrapped bundle in the cooler. Should stay warm for hours and you'll get a proper rest on it before slicing.
Two weeks ago I made brisket on my BGE. It was an overnight cook started at 8PM and woke up at 3 to wrap it and cook until about 10 and placed in a warm but turned off oven. This was the first time I had ever done a wrap on a brisket. when it was time to eat it everyone though it was the best brisket they ever had.
