Rare is in for pork now. 160 degrees with a meat thermometer prevents over cooked and underdone meat.

160 is over done as it will continue to cook while it rests and depending on the cut may get to 170 or 175. However, using a thermometer is always a good idea.

If it was beef you would be ok. But pork is bad juju..

Here we are with the "pork is scary" crap again. In terms of overall health and safety of store bought meats, pork is by far the safest. Pork is overall safer than beef, chicken and, fish. The U.S. produces the best pork in the world. Too bad we can't do the same with our beef and poultry.

almost all cases of Trichinosis in the USA are from wild game, not from USDA grocery store pork

Interesting...Wikipedia says that:
Freezing pork less than 6 inches thick for 20 days at 5 °F (−15 °C) or three days at −4 °F (−20 °C) kills larval worms.
So if it was ever frozen in transit (and if Wikipedia is right) you should be OK.

frankly, you have a better chance of catching smallpox than ingesting trichinosis in the US--and that's been true for over a decade now.

you'll be fine. Though I can't imagine that raw pork tastes very good, but it should be eaten medium-rare for optimal experience.
