Scrambled with a bit of cheese and salsa if I have the time (weekends.) Poached soft most mornings though.

Over easy, or sunny side up. Yolk has to be runny, and a little fresh ground pepper and Lawry's seasoning salt tops it off.

I loathe eggs. They make me gag. I don't think I've ever heard of anyone who can't eat them like me. They make my mom queasy sometimes but she'll still eat them on occasion. It makes breakfast burritos a difficult prospect and the nice lady at the taqueria makes fun of me when I order them without eggs. :(

I feel sad for you and anyone else that doesn't recognize the awesomeness that is the incredible edible egg. What a miserable life you must lead to not appreciate one of god's greatest gifts.

crazy, man. it's basically the perfect food. there it is, like it was given to all animals to eat. a little sterile package of pure energy and goodness.

shame. :\


but for me: these days it's Over Easy or go home. salt+pepper, maybe a little cilantro or basil (basically, whatever is in teh fridge and needs to be consumed). I'll throw some cheese on there.

on top of a toasted english muffin or bagette slice or whatever.

also love to make a nice omelet.

That's the ticket, just the yolk though with rice and soy sauce.

These days, fry the egg over easy to eat with rice. Or enchiladas. Or a hamburger.

Scrambled w/cheese or over easy. I don't like scambled eggs overcooked. I constantly stir them just until the last of the clear stuff is cooked.

butter in the pan, crack in two eggs, turn heat to med high, beat eggs until it starts coming together, add in cheese (i usually add a soft white cheese), diced chives, salt and pepper, continue mixing until slightly running but mostly holding together, plate on thick bread, or toasted brown bread. it will finish cooking as you transfer it. I usually sprinkle ground chili pepper on top.

if just sunny side up: more butter, crack in egg, med heat, cover for a few minutes, serve. The egg yolk should be a little bit opaque, the underside is usually not browned or slightly browned.
