over easy or sunny side up when i'm home. if i'm somewhere, i'd prefer an omlette

I was in Morocco last week, and had "Tagine de Kefta aux oefs" which was pretty freaking nice.

Basically its eggs, meatballs, tomatoes and various spices cooked in a little clay pot. :thumbsup:

God, I haven't had that in years! It's a middle eastern dish with a heavy French influence. If I recall, the "meatballs" are actually supposed to be made from ground lamb, and there's hints of cinnamon and cayenne pepper too. The egg texture blends with the tender lamb meat to make for a very rich but tasty breakfast :)

I'd say if you're a fan of Greek food, you'll love this as the spices they use in their dishes are similar.

crazy, man. it's basically the perfect food. there it is, like it was given to all animals to eat. a little sterile package of pure energy and goodness.

shame. :\


but for me: these days it's Over Easy or go home. salt+pepper, maybe a little cilantro or basil (basically, whatever is in teh fridge and needs to be consumed). I'll throw some cheese on there.

on top of a toasted english muffin or bagette slice or whatever.

also love to make a nice omelet.

This is the truth. If you were a caveman eggs are basically the perfect food. Very calorie dense, high in fat and protein, and loaded with vitamins.

Soft poached is what I get when ordering breakfast these days. I like them to explode with runny yolk, with barely a touch of the fork.

Scrambled are usually terrible because people overcook them; they need to be wet and most places cook the crap out of them until they are dry and mealy. D:

That yolk had better be runny and yummy. Poached preferable. Whites a little runny as well. Hard yolk = do not want unless it's hard boiled.

Now a soft boiled egg over sausage and toast? Incredible.

A perfectly poached or soft boiled egg is divine and not easy to do.

I like all cooking preparations that leave some yolk in a runny consistency, fuck scrambled.. why even bother.

I pretty much like them anyway: scrambled, poached, fried, hard-boiled, deviled, etc.

And if you hate overcooked/rubbery scrambled eggs and want delicious eggs. I would recommend this (Alton Brown method): Melt 2 T butter in the pan. Bean in 1 T of milk per egg with the eggs. Add beaten egg mixture and whatever spices you want. Don't overcook!

Almost everybody overcooks scrambled eggs. There's about a 60 second window maximum that you have. If they look done in the pan, they're toast. Pull off heat while still runny and they'll finish softly firm on the plate with no runny.

Scrambled, over medium, ham and cheese omelet, keish, hard boiled, fried.

Pretty much any way that's typical for them to be made, I'll eat them and like them.

Sometimes nothing beats over medium with some buttered toast to soak up the yolk with some salt and pepper and a little hot sauce of whatever available. Texas Pete's is my 1st choice.

60 seconds maybe if you cook over low low heat. Cook over normal heat and your window is roughly 5 seconds.
