looking for good ideas for my weekly wing fest

my buds come over every sunday and we try and commit

gastronomical suicide, the menu is wings,brats,shrimp and clams

none of us really go for tabasco or the real vinigary sauces,

habenaro sauces have been the main stay also scotch bonnet peppers.

im definately looking for solid heat and some taste

tabasco is OK at best

but for the clams(steamed) and the other stuff

it just kinda suckz

i need some good HEAT and taste

daves insanity sauce is good. the "death" series are also good.... instant death, original death, after death, etc.

do you want only flaming hot, or more of a tangy taste to go along with it
 
i just got back from pepperheads, i scored the daves(giftpack)
and a couple of others, i personnaly like HEAT-with a good pepper
taste--the place i went had floor to ceiling, rows and rows of stuff,
any names or personall favorites would be appreciated

I found a brand I like a little better than Tobasco. I don't know the name offhand, it starts with an S, and comes in a clear bottle with a green cap and a rooster on it. Most stores should have it.

It's a little hotter than Tobasco and slightly thicker.
 
There nothing more flavorful for wings than Louisiana Hot Sauce. Sure, it's not the least bit "hot," but I prefer to taste my food and sauce, rather than have a testicle-contest with my friends to see who can eat more ruined food at one sitting. 😉
 
im not into ruining food either or the bet you cant contests
im a big fan of a lil heat and good taste, as far as where you get them
on the web,supermarket,or a local place like i have on the island(pepper-heads)

I use Mad Dog 357 right now (http://www.hotsauceworld.com/357maddogcoe.html).

At 600 000 scolville units, its about 250 times spicier than tobasco, so its pretty serious. I like it though, because you can add as much heat as you want to any food without altering its taste. With less spicy sauses (even ones in the 150 000 range) I found that in order to make a really spicy meal, I had to put so much sauce it altered the flavour.

without killing it, what we used tonight

WINGS--jack danials barbecue sauce with a hit of daves(crazy caribbean)
CLAMS--casino and steamers---cholula(chili/garlic) and trappeys jalapeno sauce
CORN,NEW POTATOES,OINION--typical boil with cayenne pepper,lemon,S+P


all of it was awesome

There are 3 ways to do wings.

1. Franks Red Hot (for tang)
2. Wingers Sauce (for sweet)
3. Put non crushed sea salt on the chicken, throw it on the grill, cover chicken with lime juice as it cooks, and eat.

Note, those are 3 separate ways to do wings, don't do all of those on the same chicken.
 
El Yucateco - red Made in Yucatan Mexico, no capsicium extracts or dyes added and the heat is not toned down like a lot of habanero sauces are.
The best habanero sauce I have ever had. Amazing flavor and very hot.
I used to have to order it but the Walmart and Jewel near me carry it now.

I recently discoverd trader joes jalapeno hot sauce. Its pretty tasty. Nothing but jalapenos in it too so its not all full of crap.

of different foods--where do you guys get the trader joes?

I love peppers, but I prefer them fresh in salsas or Tex-Mex. I grow Carribean Red Hots (a type of habanero) and Chile Pequin atm, but next season I plan on growing several more varieties. Right now I'm really interested in the Rocotto (Locotto) which only grows in certain parts of South America. I'll have to grow that one indoors, though.
My wife and I make salsa together often (quality time ftw!), and luckily for me, she likes it just as hot as I do. Most of my friends, however, ask for me to make theirs medium.
I'm also addicted to the habanero enchiladas at Antonio's Tex-Mex up the road. Seriously. I had them yesterday, and I could go for another plate right now. The sauce is orange fiery heaven.

I do keep 2 bottles of hot sauce in the house one is Sriracha and the other is a South TX classic: whole dried chile pequin soaked in olive oil. The peppers stay in the bottle, and you refill the oil as necessary. Some people use vinegar, but IMO thats for mustard (which I love also).

Yup, I always keep Sriracha on hand.

Trader Joe's stuff is found at Trader Joe's. Check online to see if there's one near you.
