On another note, I figured out last weekend that the most eggs I can use in one omelet is 7 or 8. A 12 egg cheese omelet (for 2 people) is out of the question as it turns brown before it ever cooks through. I use eggs from my own chickens, and I don't feed them cholesterol. Logically then, the eggs are cholesterol free
