NC3-B5 was an old style of notation, now you only need to specify the square of the piece onl if two of the same piece can move to that square... ie if there was also a knight on A3, would would write NCB5 to specify that the c-knight would move to that square.

Nb5-d6 (check, then decide on Queen trade with B/P)
Bg3-e5 (put Queen and Rook in Double Jeopardy/ If the guy wants to double up his pawns to Queen trade let him)
Qg4-g5 (regular Queen trade)

I would suggest
Nb5-d6 Check
and dependant on whether King goes to protect Queen or not

If he goes to protect Queen with King, Go for regular trade and trade Queens and Rooks
If he just moves out of the way, Go for Bishop Double Jeopardy Queen trade.

Or if you want to keep your Queen just move it out of the way after check, but I wouldn't suggest this one.

Qxg5. Swaping queens would be great for you and you gain a free pawn out of the deal.

I would do the Knight check after the taking the pawn. Black takes queen, then you knight check before you take back the black queen.
