Ground venison. What do I do with it?

A coworker gave me 1.5 lb. Apparently it's 1/3 lard. Is there anything specific I should do with it. I don't have a grill.

Make some burgers in a pan?

Venison burgers sound good. Cast iron pan or griddle is awesome for burgers, but regular pan should do.

You can use it as the meat for "Dirty Rice", the high fat content will help to keep the rice from sticking, and it should be nice and tasty!

Anything that uses ground meat, but prepare to have it taste like venison unless you use it in a chili or dish with lots of spices. You can make burgers with it as well. Yes, deer is lean, but when I had deer it was usually mixed with pork or beef to give it some fat. OP said it has lard mixed in so it shouldn't turn out dry.

My suggestions: burgers or chili.

That is what I used the ground meat for.

Best thing to do with deer meat. Hide the flavor and make sure you don't chew it too long. (I've noticed the longer you chew venison, the more off it tastes).

Note: I dislike deer meat's flavor. 😉

It's cause you are tasting the adrenaline in the meat most likely. Meat from animals that die while under distress tend to have their meat taste very "gamey" in comparison. Which is something you either like or don't. I like my meat gamey and not gamey. It's all good to me.

I've had deer that I myself saw instantly die, so no. This isn't correct. It still tasted like crap.

First, venison is very lean so I'm not sure where you are getting your 1/3 lard from.
Second I use it in place of ground beef all the time and no one notices the difference.

It's what they eat that gives the gamey taste.

You are right that distressed animals have a different taste to them. Most of the deer I shoot don't have a clue of what is going on at the time. My uncle that raised beef would have the butcher come out to the farm and shoot the cow on the spot because transporting them and penning them up at a slaughterhouse "made the meet taste different".

Best darn beef I have ever ate and all the venison I have ever ate is great.... As for the OP mixed with lard???? I have only ever had it mixed with pork or beef so no clue except for the fact that they just took some of the best most lean meat you could have ever had and killed it. I have to admit the deer I hunt are on farmland and not forests so they eat very well and thus taste great.

The processing plant actually added lard to the mix. It is a common practice.

Growing up we only ever had ground beef for burgers, everything else was venison. In short, you can make anything with it.
