Metallica (as much as i dont like them) do a pretty good job with Last Caress

Travis' version of Britney Spears' "Hit Me Baby One More Time". There are a few other cool versions of this song. I think the Zappa brothers did one as well.

I also like Ciccone Youth's (with Sonic Youth's Thurston Moore and Kim Gordon) version of Madonna's "Get into the Groove" (Into the Groovey).

Jeff Buckley's cover of Leonard Cohen's "Hallelujah". Gives me chills every time, it's a tragedy he passed after just one record.

Sixpence None the Richer - The La's "There She Goes"

Radiohead - Blondie's "Union City Blue" and Glen Campbell's "Rhinestone Cowboy". Both recordings are lo-fi but still sound amazing.

I'm inclined to agree with you. Darren's Coconut Ass was a great CD, "Downpresser Man" was another good cover by Goldfinger.
