What is the risk of carrying a plate around? Are you touching the food? No, the cook is. In order to carry the food you carry the plate. Anyway most restaurants have designated food runners to carry the plates to the table.
In all the years I worked in the restaurant industry, I can safely say that the wait staff has some of the dirtiest hands on the planet.
They touch EVERYTHING from tables and chairs, to dirty plates to money to ice scoops, to the rags they wipe the table with ... and they smoke, sneeze, wipe thier faces, cough and etc... and finding one that actually washes their hands more than a few times thru the entire shift is a rarity.
