Yep, love it. Particularly a nice spicy chorizo or something like that. Delicious!

A bit of ketchup with tabasco sauce mixed in it with bread and crackers were how my family ate it.

If you want to go a bit more German route, boiled young potatoes (I like Yukon Golds), and a bit of sauerkraut or red cabbage works also.

I've also had fondue made with Gruyere cheese that we dipped the sliced sausages in, quite good but very rich.
 
Hot Italian sausage grilled, served on a bun w/ BBQ sauce.
Smoked sausage fried with cabbage.
Andouille in red beans & rice or gumbo.
Pork sausage crumbled into white gravy over biscuits.

I normally hate sausage but I had this at an authentic German restaurant once, and it was one of the best meals I've ever had.

Then again my family is British so its normally bland pork sausage with peas and mash. Yuk. That explains my dislike of encased meats.
 
Who doesn't!? I had an egg, onion, chorizo, and avocado scramble this morning. It's not often but I do like German/Polish/Italian sausages and their sides for dinner. And even less often is Chinese sausage, preferably the really fatty kind made from duck...but the pork kind will still do. 😛

(Now I'm hungry...and all I have are fajitas to make!)

Andouille, sliced open lengthwise, cooked on the grill and served with ice cold beer.

That makes me a happy man.

I guess if I were to serve it with anything beyond beer, it would be a shrimp boil. Lots of potatoes, corn, onions, lemons, Andouille and jumbo shrimp. 🙂
