People don't like to think. If something is intellectually stimulating, where you actually have to think a little and concentrate a bit to get something out of it, they won't like it. They want instant gratification. Rap and Rock are both so popular because the beat is slapped across your face, that pulse never changes, and it's very simple and very easy to digest.

Its also very possible that people just like the way rap and rock sound, as opposed to more "intellectually stimulating" music. Btw, I enjoy certain rap, rock, and classical music (I assume that's what you are referring to) pieces.
